Winter savory is a hardy, evergreen perennial herb with a bold, peppery flavor that adds depth to meats, beans, stews, and stuffing. Its dark green, glossy leaves grow on low, woody stems, forming a compact, shrubby mound that works beautifully in herb gardens, rock gardens, or as a low border plant.
Unlike its summer counterpart, winter savory is more cold tolerant and well-suited to Northern Connecticut gardens (Zones 5–6), often remaining evergreen through mild winters. Small white to pale pink flowers bloom in mid to late summer, attracting bees and other pollinators.
